Ingredients:

  • 1 tablespoon olive oil

  • 1 medium yellow onion, chopped

  • 2 cloves garlic, minced

  • 1 jalapeño, seeded and minced (optional)

  • 1 teaspoon cumin

  • ½ teaspoon chili powder

  • 1 pound boneless, skinless chicken breasts

  • 6 cups chicken broth

  • 1 (15-ounce) can cannellini beans, rinsed and drained

  • ½ cup uncooked white rice

  • ½ cup chopped fresh cilantro, plus more for garnish

Instructions:

  4. Shred the Chicken: Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.

  5. Add Beans and Rice: Stir in the rinsed and drained cannellini beans and uncooked white rice. Bring the chili back to a simmer, cover, and cook for another 15-20 minutes, or until the rice is tender. Stir occasionally to prevent sticking.

  6. Stir in Fresh Flavors: Remove the pot from the heat and stir in the fresh cilantro and lime juice. Season with salt and freshly ground black pepper to taste.
